Double dates. Before the legal year started on 1st January, it used to start on 25th March. So to distinguish this, dates are written with 2 years. The first is the year assuming the start of the year is 25th March, the second year is the year as if it had started on 1st January.
"made his/her Will" could be the date the Will was made, proved or also the date at which they died.
"Probate" is the actual date of the administration of the person's affairs some time after death. I have seen examples of this being as late as 20 years after their death.
If a person did not make a Will then administration of their affairs (inventory) (admon) will take place instead.
